From a Waiheke winery known for it’s long lived reds, comes a chilled wine for more immediate enjoyment. Hand-harvested early in the morning while the fruit was still cool, this blend combines two portions: one cold-soaked on skins for 5 days, while a second portion undergoes a Beaujolais Nouveau-style carbonic maceration for 3 weeks as whole bunches.

The result is an electric mix of Merlot and Malbec, gorgeously light, fresh, and bursting with red fruit flavours.

From the crisp cold morning it was picked to the lonely isolated ferment in the darkness of our cellar, this wine has been a sharp deviation from the typical Te Motu wines. A unique vibrant light red now ready for its day in the sun.

Winemaking notes

Hand harvested early in the morning while the fruit was still cold. Gently destemmed and whole berries placed in a stainless tank with good CO2 cover. ‘Cool soak’ on skins for 5 days with minimal disturbance.

Lightly basket pressed back to tank for a slow wild fermentation at low temperature for 4-5 weeks followed by partial MLF, which was stopped to retain freshness and expressive fruit aromatics. 

15% Carbonic

Whole bunches are carefully hand-picked, immaculately sorted and gently placed into a stainless tank. The tank is filled with CO2 and warmed to encourage the enzymatic process of carbonic maceration. Whole bunches are left in tank for several weeks to undergo carbonic maceration before being gently pressed and blended in with the main tank for fermentation.

Combined portions are racked off gross lees and left to settle for several months.

Lightly fined with bentonite, racked and filtered to bottle.
